This month we are featuring an Illinois winery! Sable Creek Winery specializes in west coast dry reds and whites. Bill and Sandra Harris, originally from Southern Illinois, are the owners of Sable Creek Winery located in Plainfiled, Illinois. Bill is the winemaker, and the winery is run with the help of Sandra and their children, Samantha and Steve.
Bill began making wine over 20 years ago in his home as a hobby, and eventually joined a home wine maker's club. He opened the artisan winery in Plainfield in 2019 to showcase his wines made from grapes sourced from across the country.
In March of 2023 they expanded their production to distribute their wines to 30 locations.
100% Sauvignon Blanc. Aromas of grapefruit, melon, and hints of minerality. On the palate, crisp white grapefruit, notes of salinity.
100% Pinot Grigio. A dry, medium-bodied Pinot Grigio sourced from Columbia Valley, WA. Flavors of Bartlett pear, lemon, citrus with a crisp mineral finish.
Brianna is a relatively new and little-known white grape variety bred in 1983 by Elmer Swenson in the US state of Wisconsin. A hybrid variety, and one of many related to Muscat, Brianna was initially used as a table grape. This grape is sourced from Wilmington, IL. A medium-bodied dry wine with tropical notes of pineapple, mango, floral notes, grapefruit and a crisp finish.
This semi-sweet rosé is from the Noiret grape varietal. The exact genealogy of Noiret grapes is complex — the variety has Vitis Vinifera, Vitis Labrusca, and Vitis Riparia in its lineage. Developed at Cornell University, the original vines were germinated in 1974. It is medium bodied, with notes of earthy strawberry, cranberry and a tart finish.
A blend of Merlot, Cabernet Sauvignon, and Malbec. Aged in American oak. Aromas of raspberry, blueberry, vanilla, and fennel. On the palate, tart cherry, licorice. Licorice continues on the finish, with notes of vanilla.
This California Merlot is dry, full-bodied, bolder style with aromas of Kirsch, caramel, and cinnamon. Soft, dark fruit and light tobacco notes on the palate. Soft tannins. Barrel-aged in American oak for 18 months.
A blend of Zinfandel, Cabernet Sauvignon, Malbec, Merlot, and Petite Sirah. Red currant and eucalyptus aromas. On the palate, vegetal/herbal notes and black tea, followed by dark cherry, black pepper, and green bell pepper. High acidity balanced with high tannins. A long cedar and cinnamon finish.
Full-bodied red with aromas of dark cherry, cedar, vanilla, cocoa, and eucalyptus. Big tannins balanced with high acidity. On the palate, sweet plum and dark cherry, vanilla, and a long black tea finish. Aged in American oak.
